Sattu is another superfood which is steadily gaining popularity and all thanks to Bihar, Jharkhand, West Bengal and Uttar Pradesh. It is basically a flour- like ingredient that is high in nutrients and is powerhouse of energy. Sattu is also called the “Poor man’s protein”.
Sattu flour is made by soaking the chana dal overnight, then boiling them till cooked al dente and then drying this under the sun. Once the cooked dal is dried. It needs to be roasted till they crisp up and reduce any residual water content. Further, this roasted dal is grounded to make a flour.
Sattu drink is very filling and healthy. It is full of nutrients, fiber, protein and is a brilliant summer cooler. There are more benefits associated with sattu drink like it protects the body against sunstroke, amazing for women during pregnancy and menstruation as replenishes all the lost nutrients, helps restore your natural glow, boosts digestion and helps in weight loss.
Pro Tip - Sattu is a little coarse than besan in looks and there is detectable difference in taste too because of roasting - so never get confused!
Ingredients
- 3-1/2 tablespoons Roasted Gram Flour (sattu)
- 4 Mint Leaves, finely chopped
- 2 tablespoons Coriander Leaves, finely chopped
- 1 Green Chilli , finely chopped
- 1 tablespoon Lemon juice
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Black Salt
- 3 cups Chilled water
- Salt, to taste
Directions
- To begin making the sattu drink, get all the ingredients handy.
- In a bowl, add the sattu flour. To this, add rest of the ingredients including pudina leaves, coriander leaves, green chilli, lemon juice, roasted cumin powder, black salt, and mix well after adding cold or chilled water.
- Stir until the drink is uniform and without any lumps. You can do this with a spoon or use a handheld buttermilk churner/whisk.
- Pour it into the tall glasses and serve.
