Let me start off by confessing my love for pancakes. I love pancakes. I love all varieties, flavors, sizes and shapes of pancakes. These make the perfect special weekday breakfast or lazy weekend treat. For me, I can have pancakes day and night!
Now with that being said, pancakes that we typically encounter aren’t made from the scratch; they’re pre-made, highly processed, highly refined, contains hydrogenated oil and nutrition starved flour mix. I am sure we all want the real goodness with taste. So, let’s follow the simple ground rules.
Pancakes are naturally quite simple to make; they require a flour, leavening agent, a binding agent, and some sweetness or additional flavors from spices. These pancakes are so incredible easy to make, you’ll never look back at purchasing the another pre- made processed pancake mix again. Also, most of these ingredients are staple ingredients in my pantry and probably yours too!

Ingredients
- 1. ½ cup of dry rolled oats, grounded into a flour
- 1 whole frozen banana
- 2 tablespoon of almond flour
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ cup milk ( your choice of milk)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 teaspoon of oil
Directions:
- In a small grinder or food processor , grind the dry oatmeal into a fine flour. Now add all the dry ingredient to it.
- Add all wet ingredients in a large mixing bowl.
- Pour the wet ingredients into the bowl with your dry ingredients.
- Blend it until well combined. You can use the spatula to see the consistency of the mixture.
- Additional milk maybe needed, depending on how thick or thin you like your pancakes.
- Grease a large skillet with oil.
- Pour about ¼ - ½ cup of the pancake batter onto the skillet ( on medium heat) - you can adjust the amount depending upon the size of your skillet.
- Cook until the right side up has small bubbles escaping.
- Flip and finish cooking until both sides are golden brown and fluffy.
- Plate and serve with your favourite toppings : Stewed apple, bananas, maple syrup, drizzle of local honey, almond butter , cinnamon or castor sugar etc.
Pro Tips :
- Because you are blending the oats, you can easily use rolled oats or quick cooking oats - avoid steel cut oats.
- You can use variety of milk - they can be easily made dairy free by using almond or coconut milk.
